Creamy Chicken Nachos

Creamy Chicken Nachos are a delightful and comforting snack perfect for gatherings, featuring layers of flavor with creamy chicken and gooey cheese.

  • 2 cups cooked and shredded chicken breasts
  • 1 large bag tortilla chips
  • 1½ cups shredded cheddar cheese
  • 1 cup Monterey Jack or mozzarella cheese
  • 1 can (10 oz) cream of chicken soup
  • 1 can Rotel tomatoes (mild or spicy, drained slightly)
  • 1 can black beans (optional, drained and rinsed)
  • ½ cup sour cream or Greek yogurt
  • 1 tablespoon taco seasoning
  • Salt and pepper, to taste
  • Optional toppings: diced avocado, sliced jalapeños, pico de gallo, chopped cilantro, black olives, salsa or guacamole, lime wedges

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cooked and shredded chicken, cream of chicken soup, Rotel tomatoes, and sour cream or Greek yogurt.
  3. Stir in the taco seasoning and add black beans if desired.
  4. Season with salt and pepper, mixing until fully combined.
  5. Spread a layer of tortilla chips on a large baking sheet.
  6. Spoon the creamy chicken mixture evenly over the tortilla chips.
  7. Sprinkle the shredded cheddar and Monterey Jack (or mozzarella) cheeses over the nachos.
  8. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
  9. Add optional toppings and serve immediately while warm.

Notes

Use rotisserie chicken for convenience, and feel free to customize toppings based on your preferences.
