Creamy Chicken Nachos

Delightful Creamy Chicken Nachos, a perfect blend of crispy tortilla chips topped with a cheesy mixture, ideal for game days or family dinners.

  • 2 cups cooked and shredded chicken breasts
  • 1 large bag tortilla chips
  • 1½ cups shredded cheddar cheese
  • 1 cup Monterey Jack or mozzarella cheese
  • 1 can (10 oz) cream of chicken soup
  • 1 can Rotel tomatoes (mild or spicy, drained slightly)
  • 1 can black beans (optional, drained and rinsed)
  • ½ cup sour cream or Greek yogurt
  • 1 tablespoon taco seasoning
  • Salt and pepper, to taste
  • Optional toppings: diced avocado, sliced jalapeños, pico de gallo, chopped cilantro, black olives, salsa or guacamole, lime wedges

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken, cream of chicken soup, Rotel tomatoes, sour cream or Greek yogurt, taco seasoning, and black beans, seasoning with salt and pepper.
  3. Spread a layer of tortilla chips on a baking sheet.
  4. Spoon the creamy chicken mixture evenly over the chips.
  5. Sprinkle shredded cheddar cheese and Monterey Jack or mozzarella cheese on top.
  6. Bake for 10 to 12 minutes, until cheese is melted and bubbly.
  7. Remove from oven and garnish with optional toppings.
  8. Serve immediately and enjoy!
