Frito Cowboy Cabbage

A colorful and crunchy salad that combines fresh veggies and Fritos, making it a delightful side or a hearty main dish.

  • 1 bag coleslaw mix
  • 1 can black beans (rinsed and drained)
  • 1 can canned corn (drained)
  • 1 medium jalapeño pepper (diced)
  • 1 medium red bell pepper (diced)
  • 3 stalks green onions (sliced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 packet taco seasoning
  • 1 teaspoon ground cumin
  • 2 cups Chili Cheese Fritos (reserve some for topping)

Instructions

  1. Wash and prepare the fresh produce by dicing the jalapeño and red bell pepper, slicing the green onions, and chopping the cilantro.
  2. In a large mixing bowl, combine coleslaw mix, black beans, corn, diced jalapeño, diced red bell pepper, sliced green onions, and chopped cilantro.
  3. Pour the taco seasoning and ground cumin over the veggie mixture, and gently mix until well coated.
  4. Fold in the Chili Cheese Fritos gently, keeping some whole for crunch.
  5. Serve immediately or chill in the fridge for about 30 minutes to enhance flavors.

Notes

Customize with proteins like grilled chicken or shrimp for a complete meal. Store any leftovers in an airtight container for up to 2-3 days.
