Sautéed Mushrooms with Spinach

A delicious and nutritious dish showcasing earthy mushrooms paired with the freshness of spinach, perfect as a side or main meal.

  • 2 tablespoons olive oil
  • 1 pound mushrooms (cremini, button, or a mix)
  • 4 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: Fresh parsley or red pepper flakes for garnish

Instructions

  1. Clean and slice the mushrooms, rinse and dry the spinach, and mince the garlic.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the sliced mushrooms to the skillet and sauté for 5 to 8 minutes until golden brown.
  4. Stir in the minced garlic and cook for 30 seconds until fragrant, then add the spinach.
  5. Cook stirring until the spinach is wilted, about 2 to 3 minutes.
  6. Season with salt and pepper, add the lemon juice, and stir well. Cook for another minute to meld the flavors.
  7. Serve warm, garnished with parsley or red pepper flakes if desired.

Notes

For best flavor, try using a mix of different mushrooms. Don’t overcrowd the pan to prevent steaming.
