Slow Cooker Cowboy Casserole

A hearty and filling dish that brings a taste of the wild west to your dinner table, perfect for busy families.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 medium potatoes, sliced thin
  • 1 can (15 oz) diced tomatoes, drained
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef for about 5 to 7 minutes until no longer pink. Drain excess grease.
  2. Layer the browned ground beef, chopped onion, minced garlic, sliced potatoes, diced tomatoes, kidney beans, and frozen corn in the slow cooker.
  3. In a separate bowl, mix cream of mushroom soup, beef broth, and paprika. Pour over the layers in the slow cooker. Season with salt and pepper.
  4. Sprinkle shredded cheddar cheese evenly over the top.
  5. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  6. Serve hot, optionally with diced green onions, fresh parsley, or a dollop of sour cream.
